This is Lisa. She is known to many as Veggie Lisa, but I think she deserves the title Super Veggie Lisa. Check this out: she is a mom of four kids who loves to dance, cook, exercise, shop, decorate, and enjoy all the beautiful things the state of Utah has to offer. She is a lifelong vegetarian with a passion for healthy food and good nutrition. Her family loves to travel, try new things, and meet new people. Oh yeah, and she runs half-marathons and has a yard full of chickens.

I am so excited to have Lisa's expert voice here to share how travel helps to keep their family healthy. She will also be sharing some tips and tricks for eating healthy while on the road and how you can keep an exercise routine while traveling. I know I need all the help I can get in that area. I sat down to get to know Lisa and learn a little bit more about her travel personality.

Quick! You’ve got 30 seconds before your toddler dumps your bag all over the airport lounge. Tell us a little bit about yourself and your family.

Lisa: I married my college sweetheart 14 years ago.We have four kids ages 11-1. We love to spend time together doing fun things! Some of the things we enjoy are snowmobiling, hiking, watching outdoor movies, camping, family bikes rides, and going to new places. Good nutrition is a priority in our family, so we have found ways to be creative while on the go. I want my kids to see the world and not to stay in one place for very long.

Okay, let’s do some easy questions:

Car or Airplane? Car

Beach or Mountains? Beach!

Carry-on or Checked? Checked

Early bird or Night Owl? Early Bird

Museums or Hiking Trails? Hiking Trails

Now, let’s get down to business. What’s your favorite trip you’ve ever taken?

About 4 years ago, we took our (then) three little kids to the island of Kauai. Everyday we would wake up, pack the minivan and head off to our daily adventure . We didn't really have any set plans, but would spend our days there exploring empty beaches, hiking towering jungles, and eating delicious local Hawaiian food. Our kids still talk about all the fun we had, even though they were so young. We made some wonderful family memories!

What is one place you are dreaming of visiting?

Greece

If you could pick one quote to sum up your feelings about travel, what would it be?

Traveling with kids is always an adventure!
