~The Ultimate Comfort Food-Bacon Bliss Mac and Cheese~
Have you ever played the game where you have to choose just one food that you would eat if you were stranded on a deserted island? If you are like my oldest son, your unwavering choice would be mac and cheese. You can have that all- mac- all- the- time experience without turning into Robinson Crusoe with a visit to the Houston based Jus Mac. As the name suggests, there is only one item on the menu, but with eighteen varieties to choose from, you are bound to find some cheesy goodness that is just your style.
There are some prerequisites to dining at Jus Mac:
- you should like mac and cheese (although they will serve a Panini or a side of hot dog),
- you should not be lactose intolerant (or you will be very uncomfortable),
- you need to bring along at least two or three kids (borrow some if you have to)
~Buffalo Chicken Mac and Cheese~
If you are looking for plain variety of mac and cheese, go for the All-American, but if you want something a little more exotic, go for the Goat Cheese or the Buffalo Chicken variety. Of course, if you like your comfort food with an extra side of comfort, the Bacon Bliss is the way to go. The only major decisions left to make are whether you would like bread crumbs on your pasta (you do) and whether you will leave any room for dessert (you must).
There is really only one choice for dessert : a big ol’slab of Texas sheet cake. If you have no knowledge of this culinary marvel, you likely haven’t spent much time at any southern Baptist potluck dinners. They are as sure a staple as fried chicken and green bean casserole, and just as much a symbol of southern comfort food as mac and cheese. Moist and fudgy and covered with thick frosting adorned with pecans (that’s pronounced puh-kahn), it is the perfect ending to a meal filled with southern comfort.

I can happily say that I do know what Texas sheet cake is. Friend of mine from Texas brought one to a potluck BBQ we threw a few years back. It was amazing! As for the mac n' cheese, it sure looks good, but sadly I have never been a fan. Then again, anything with bacon usually wins me over 😉 I just have nightmare memories of my mom's very watery mac n' cheese and have never liked it since.

The Buffalo Chicken Mac N Cheese looks great. I could envision myself needing a sampling plate to get a full taste of all the options here.

Steve, Steve, Steve. You can call it a pee-can anywhere but the Great State of Texas. In these here parts is a puh-kahn, and since it is our state tree, we ought to know.
